Now that we all have a solid 7 weeks under our belts and we all have tons of recipes at our disposal, what would make you not want to keep going?

I wanted to make something festive for St. Patty’s Day, but I am not a big corn beef and cabbage fan so I decided to investigate. I first used google and searched traditional St. Patty’s Day meals, and then I found something that Chris and I would both enjoy; Sheppard’s Pie with Chicken. It was so easy to make and even though I didn’t have all the ingredients I decided to “annie it” (a term we use because I never can follow a recipe, I always have to put my own spin on it). I grilled Chx, diced onion, green beans, yellow pepper, and mushrooms, sautéed that with low sodium chicken broth for 10 minutes, I added garlic, oregano, fennel seed, cilantro, and pepper. I steamed cauliflower in the microwave, and mashed it with a tablespoon of butter, a tablespoon of Dijon mustard, and a teaspoon (or to your liking) of olive oil mayo. I then added the chx mix to a casserole bowl and added cut up cooked sweet potato, topped it with the mashed cauliflower, put oven to 350 for 30 minutes and got the best darn Sheppard’s Pie I had ever tasted. It might have been the only Sheppard’s pie I have ever tasted, but it was sooo tasty!

Chris and I said to each other “I don’t know why anyone would want to eat any other way?”

It still tasted delicious, but I didn’t have that full sickly feeling when I was done with it. I have heard a lot of you talk about how sick you have gotten this weekend after splurging on pizza, bagels, ice cream, etc… well the great thing about Paleo is that we can make all of those treats we love, and they taste just as good if not better!!! This week Chris and I didn’t have time to plan due to our really busy week. We were leaving early and getting home late with no time to plan. What I realized is that you don’t even need a lot of time to cook Paleo meals!

So why would you want to feel bad after eating something unhealthy, when you can eat something that tastes just as good and feel GREAT?
So CrossFitters if you have any foods that you are craving after 7 weeks of not being able to have them, email me ask me or call me and I will give you a way to make it more Paleo friendly. Just because the Challenge is over doesn’t mean we have to go back to our old habits!!! We are all here for each other, and there is no better feeling than having a whole gym that supports you and is here to help!

      cookies – do you have another recipe besides PB??

      braosted/fried chicken- what do you use at the bread crumbs/crackers for the outside

      casseroles.. period there is always something non paleo in these ( cheese etc)

        here’s a roasted sweet potato recipe
        whole roasting chicken (3-1/2 lb.)
        1 C of almond flour
        1-1/4 lb. sweet potatoes (about 3)
        1/4 cup KRAFT Tuscan House Italian Dressing and Marinade
        2 cloves of minced garlic
        ½ onion sliced
        Make It
        HEAT oven to 400ºF. Coat chicken with coating mix; place in 13×9-inch pan. Bake 30 min.
        MEANWHILE, prick each potato several times with fork. Microwave on HIGH 2 to 3 min. or just until sliceable but not soft. Cut into spears. Toss with dressing add onion and garlic.
        ADD potatoes to baking dish with chicken. Bake 30 min. or until chicken is cooked through (165ºF) and potatoes are tender.

        Almond Maccaroons:

        4 egg whites, room temperature
        2 teaspoons almond extract
        1/2 teaspoon cream of tartar
        1 cup organic sugar
        1/4 cup powdered sugar

        I have never tried them but they are low calorie and sound delicious.

        Tracy also made an awesome Paleo cookie recipe that I am sure she would be willing to give to you.

      just can’t do anything about the cadbury cream eggs LOL!
      but Cookies and Cream you can make the banana ice cream or leave out the banana’s and add those KOOTOOS (the oreo cookies from the coop) and blend those with the ice cream.
      It would not be Paleo but a Gluten Free delicious alternative!

      • It’s a good thing Cadbury mini eggs only come out once a year! Ha!! Thanks for the advice. The recipes you posted in here sound very yummy. I’ve also heard some good things about this banana ice cream…. definitely one that I’m going to try out. 🙂

      Here is a Orange Chicken recipe:
      1/2 c Juiced Oranges
      2 tb Sesame oil; divided
      2 tb Liquid Amino’s (found at any whole foods store Coop, wayne and mary’s and meadowsweet)
      1 tb Dry sherry
      2 ts Grated fresh ginger
      1 ts Grated orange peel
      1 Garlic clove; minced
      1 1/2 lb Chicken breast — (boneless, skinless) — cut into strips
      3 c Mixed fresh vegetables
      – such as green bell pepper, – red bell pepper, snow peas – carrots, green onions, – mushrooms, and/or onions
      1 tb almond flour or coconut flour
      1/2 c Unsalted cashew bits -OR- cashew halves

      Also Kylie posted an awesome Lettuce wrap recipe on google docs

  4. I so applaude you all for your Paleo Challenge efforts!!! I am not actively in your group but what I learned and what I am trying to following and remember this is a life style change not a change for the challenge (and I am a horrible eater), is to eliminate processed foods, which is really hard in the midwest in the winter, but we will all thrive with summer coming!!! I grill all year round and now am making extras (even though I hate left overs). I cheat with PB and I cheat with Tootie Rolls (oh, is Diet Coke a cheat). Small changes, small steps at a time and we will all put it all together. We kill ourselves in the Box not to watch what we put in our mouths!!!

  6. Thanks Annie! I should have more actively searched for a recipe. I still struggle with some of the choices to make. I know the main fruit/veggie/lean meats…struggle with ‘adding the right spices’ to the foods!
    You are the BEST!

  8. How about Spinach dip?? I don’t mind heating up frozen spinach but what’s something tummy yummy instead of cheese?

    A veggie dip that’s similar to the veggie dip you buy?

    Oooohhh….and how about…..cheesecake (this might be a tough one but thought I’d ask!!)
