Chorizo Stuffed Peppers

Prep time: 5 minutes
Cook time: 45 minutes
• 4 green or red bell peppers
• 1 lb chicken chorizo sausage, bulk
• 1 cup onion, chopped
• 1 tsp thyme
• salt and pepper to taste
Preheat the oven to 375 degrees. Cut the top off of each pepper; discard the tops and seeds. Chop the onion and add it to a bowl. Add the chorizo, plus spices. Mix well. Stuff the meat mixture into each pepper. Place the peppers upright into a baking pan. Bake for 45 minutes, or until the peppers have softened.
Zone info: 4 servings at <1 block carb, 4 block protein (6g carb, 28g prot, 4g fat)

I’ve made the carrot cake muffins. They are pretty good. I would probably do only a 1/2 cup of cabbage next time though. They were very handy to grap and go in the mornings. Here’s another muffin recipe I like. I do omit the salt.
Carrot Banana Muffins
These are so yummy and can double as a breakfast or dessert. Just bake and then have a grab and go meal for weeks!
Ingredients
•2 cups blanched almond flour
•2 teaspoons baking soda
•1 teaspoon celtic sea salt
•1 tablespoon cinnamon
•1 cup dates, pitted
•3 ripe bananas
•3 eggs
•1 teaspoon apple cider vinegar
•¼ cup coconut oil
•1 ½ cups carrots, shredded
•¾ cup walnuts, finely chopped
Instructions
1.In a small bowl, combine almond flour, baking soda, salt, and cinnamon
2.In a food processor, combine dates, bananas, eggs, vinegar and oil
3.Transfer mixture to a large bowl
4.Blend dry mixture into wet until thoroughly combined
5.Fold in carrots and walnuts
6.Spoon mixture into paper lined muffin tins
